The Executive Chef
Mike began his professional cooking career in Atlanta, GA in 2001 under the guidance of several classically trained European chefs and ACF competition winning teams. His ability to thrive under pressure and his attention to detail allowed him to quickly gain recognition in kitchens full of young aspiring cooks. Opportunity came quickly and Mike made the move to the mountains of North Carolina to do seasonal work at several prestigious country clubs. Within a year, Mike was promoted to sous chef at Highlands Country Club while also working at The Jupiter Island Club during the off-season. After seeing a variety of cooking styles and learning various techniques, Mike attended culinary school at AB Tech in Asheville, NC where he has also served as an adjunct instructor.
With over 15 years of fine-dining experience, he came to The Farm to build The Farm Kitchen’s culinary program. As the Executive Chef, Mike has used the same intensity and attention to detail, to quickly build our catering operation from the ground up.

Our Farm Kitchen strives to be the very best. We specialize in farm-to-table cuisine and will work with you to create a customized menu that will be uniquely yours.
We only use the freshest ingredients, starting with our own organic garden. We work with local farmers to source produce, cheese, meat and fish not grown here on the property. Our Farm Kitchen team will assist you with important details, offering creative and practical solutions at each stage of the planning process. Our menus reflect a sensitivity for cuisines, budgets, and food restrictions.
Our Organic Garden
The Farm has an expanding organic garden and greenhouse that allow us to offer fresh, seasonal, farm-to-table creations to our wedding and event clients, Culinary Escape participants, wine dinner guests and cooking class students alike.
When you’re here, stop by and visit the garden. Chances are you’ll see our gardener harvesting herbs, vegetables and edible flowers for that day’s menu, ensuring fresh-picked flavor for an authentic farm-to-table dining experience.
The Farm’s Bar Packages
There are enough details to fuss over with events – let us handle the details for your bar. Our house package features a carefully curated list of local craft beers and ciders (They don’t call Asheville “Beer City” for nothing!) as well as delicious wines. We also have options for signature cocktails and a full bar.

Parker Cottage was awesome, the culinary experience was awesome, the food was delicious & the chef & sous chef could not have been nicer, the owner's are so nice & made us feel like family or old friends. Wine & Beer
Chef Mike works with local wine stores and breweries to create seasonal menus designed to pair perfectly with specific wines and craft beers. Dinners are served at our Chef’s Table, which is right in the kitchen, so participants can watch as the food is prepared and learn about the wines and beers as they are served.list of dinners
